Almond Delight Protein Donuts

Ingredients:

2 scoops HLTH Code Chocolate
¾ cup almond flour
¼ cup shredded unsweetened coconut
¼ cup chopped almonds
2 large eggs
¼ cup unsweetened almond milk
½ tsp vanilla extract
½ tsp baking powder
1 Tbsp coconut oil (melted, for the batter)
Coconut oil or non-stick spray (for greasing the donut pan)

For the chocolate glaze:
¼ cup cocoa powder
1 scoop HLTH Code Chocolate
1 cup powdered sweetener (e.g. monk fruit)
2-3 Tbsp unsweetened almond milk (adjust for consistency)
½ tsp vanilla extract

Optional toppings:
Additional shredded coconut

Instructions:

Preheat your oven to 175°C (350°F) and lightly grease a donut pan with coconut oil or non-stick spray.

In a mixing bowl, whisk together HLTH Code Chocolate, almond flour, shredded coconut, chopped almonds, and baking powder.

In another bowl, beat the eggs, then stir in the almond milk, vanilla extract, and melted coconut oil.

Gradually fold the wet ingredients into the dry ingredients, stirring until the batter is smooth and thick.

Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.

Bake for 12-15 minutes, or until a toothpick inserted into a donut comes out clean. Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack.

In a small bowl, whisk together the cocoa powder, HLTH Code Chocolate powder, powdered sweetener, almond milk, and vanilla extract. Mix until smooth and glossy. Add almond milk a little at a time to reach the desired glaze consistency.

Once the donuts are completely cooled, dip the tops into the chocolate glaze. Let the excess glaze drip off, then place them on the wire rack. Optionally, sprinkle with extra shredded coconut before the glaze sets.

Allow the glaze to set for a few minutes before serving.
