Broccoli and Cheddar Bites

Cooking time: 25 minutes

Serve: 6 (24 bites per serving)

Ingredients:
– 3 large eggs
– ½ teaspoon garlic powder
– ½ cup Keto almond bread, torn into pieces
– ¼ cup mayonnaise
– 1 cup grated cheddar cheese
– 2 ½ cups chopped broccoli
– Salt and pepper, to taste
– 2 tablespoons olive oil, to grease

Instructions:
1. Beat eggs with garlic powder, salt, and pepper in a bowl.
2. Stir in bread pieces and mix until the bread is completely moistened.
3. Add Mayonnaise, cheddar, and chopped broccoli.
4. Stir to combine.
5. Preheat oven to 350F.
6. Coat 2 12-hole mini-muffin tins with olive oil.
7. Divide the broccoli mixture among muffin tin and gently smooth the top with wet fingers.
8. Bake the mini bites for 20-25 minutes or until browned on top.
9. Remove from the oven and cool for 10 minutes before removing from the tin and serving.
