Chicken Meatballs Stuffed with Cheese

Serve: 4

Ingredients:
– 1.5lb. ground chicken meat
– 2 tablespoons chopped parsley
– 1 tablespoon fresh chives, chopped
– 1 clove garlic, minced
– 1 large egg yolk
– 1 cup almond meal
– Salt and pepper, to taste
– 4oz. mozzarella, cubed, cut into 12 pieces
– 2 tablespoons bacon fat

Sauce:
– ½ cup real mayonnaise
– 1 teaspoon chili powder

Instructions:
1. Combine chicken meat, parsley, chives, garlic, egg yolk, ¾ cup almond meal, salt, and pepper, to taste.
2. Divide the mixture into 12 pieces.
3. Flatten each piece between palms, place 1 mozzarella cube in the center and wrap the meat around the cheese. Roll gently to shape into a ball.
4. Roll the meatballs through the almond meal.
5. Heat bacon fat or oil of choice in a large skillet. Fry the meatballs for 10 minutes or until golden brown.
6. In the meantime, combine mayonnaise with chili powder.
7. Serve chicken meatballs with chili mayo.
