Mediterranean Fish Stew

Recipe makes 2 servings

Ingredients:

4 cod fillets (approximately 1 pound/455g)
2 Tablespoons olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 can (400g) diced tomatoes (or fresh tomatoes, chopped)
1 cup fish broth or vegetable broth
1 teaspoon dried oregano
1 teaspoon dried thyme
½ teaspoon smoked paprika
Salt and pepper, to taste
¼ cup fresh parsley, chopped

Instructions:

Cut the cod fillets into bite-sized chunks and set aside. Season with a pinch of salt and pepper.

In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Add the diced tomatoes (with liquid) and broth). Stir in the dried oregano, thyme, and smoked paprika. Bring the mixture to a simmer and cook for about 10 minutes to allow the flavors to meld together.

Gently add the cod chunks to the pot. Simmer for about 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

Taste the stew and adjust seasoning with more salt and pepper if necessary. Stir in the chopped fresh parsley.

Serve warm.
