Spanish-style Chicken

Recipe makes 4 servings
Ingredients:
For the Chicken:
8 bone-in, skin-on chicken thighs
Salt and black pepper to taste
2 Tbsp (27ml) olive oil
For the Tomato Sauce:
1 medium onion (110g), finely chopped
2 cloves garlic, minced
1 cup (129g) chopped red and yellow bell peppers
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp dried oregano
1/4 tsp cayenne pepper (adjust to your spice preference)
1 can (14oz/397g) crushed tomatoes
2 Tbsp pitted sliced green olives
1/2 cup (120ml) chicken broth
2 bay leaves
Salt and black pepper
Chopped fresh parsley for garnish
Instructions:
Season the chicken thighs with salt and black pepper.
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook for 5 to 7 minutes until the skin is crispy and browned. Flip the chicken and cook for another 3 to 4 minutes; remove the chicken from the skillet and set it aside.
In the same skillet, add the chopped onion and red bell pepper. Sauté for about 3 to 4 minutes until they start to soften.
Add the minced garlic, smoked paprika, ground cumin, dried oregano, and cayenne pepper. Stir and cook for about a minute until the spices become fragrant.
Pour in the crushed tomatoes, green olives, chicken broth, and then add in the bay leaves. Season with salt and black pepper to taste and stir to combine all the ingredients.
Return the browned chicken thighs to the skillet, skin-side up, nestling them into the tomato sauce.
Preheat your oven to 350°F (175°C)
Transfer the skillet to the preheated oven and bake for 25 to 30 minutes, or until the chicken is fully cooked and has reached an internal temperature of 165°F (74°C).
Remove the skillet from the oven and garnish with chopped fresh parsley before serving.
