Banana Nut Muffins

Recipe makes 12 muffins

Dry Ingredients:
4 scoops HLTH Code Creamy Vanilla
1 cup blanched almond flour
1/2 cup ground flaxseed
1/2 cup Golden Monkfruit Sweetener (or brown-sugar substitute)
2 tsp baking powder
1 tsp ground cinnamon
1/2 cups walnuts (lightly chopped)

Wet Ingredients
1/2 cup coconut milk
4 tbsp melted butter
2 1/2 tsp banana extract
2 eggs

Instructions
Set oven to 350F
Add all dry ingredients to a mixing bowl (except walnuts)
Mix dry ingredients together
Add wet ingredients into same bowl
Stir until batter is formed and then fold in walnuts
Line muffin pan with 12 muffin liners
Pour batter into muffin liners
Bake for 22-25 minutes, or until an inserted toothpick in center comes out clean
Tops of muffins should be a medium brown color
