Birthday Mug Cake

The recipe makes 1 serving

Ingredients:

For the cake:
1 scoop (39g) HTLH Code Vanilla
½ tsp baking powder
1 Tbsp coconut flour
1 egg
½ tsp Monkfruit sweetener, granulated
¼ cup (60ml) unsweetened almond milk

For the icing:
1 scoop (39g) HLTH Code Vanilla
2 Tbsp (30g) Greek yogurt, plain
1-2 Tbsp unsweetened almond milk

For the décor:
Low carb, or sugar-free sprinkles


Instructions:

Coat the microwave-safe mug with some cooking spray and set aside.

In a small bowl, or directly into the mug, combine all ingredients.

Microwave on high for 60 seconds or until just cooked in the center.

Make the icing; combine all ingredients in a bowl.

Spread the icing over the cake. Add some sprinkles on top and serve.
