Blueberry Walnut Parfaits

Ingredients:

2 scoops Creamy Vanilla HLTH Code
1 cup high fat yogurt
1/2 cup blueberries
1/4 cup walnuts
3 Tbsp water
1 Tbsp powdered sweetener
1/2 tsp xanthan gum

Instructions

Pour blueberries and 2 Tbsp water into stovetop pan on low heat.
Stir blueberries around a few times and wait 10-15 minutes until they soften and mash with a spoon. Remove from heat.
Stir well and add in remaining 1 Tbsp of water and the powdered sweetener.
Stir to combine and then sprinkle xanthan gum on top and let it sit a few minutes to thicken.
After waiting a few minutes, stir again and you should have a jam-like consistency.
Once ready, set aside and mix 1 cup of yogurt with 2 scoops of HLTH Code in a medium-sized bowl.
Chop up walnuts into small pieces.
Combine ingredients into 4 separate servings, however you feel fits your parfait best!
