Caramelized Cinnamon Roll Protein Bowl

The recipe makes 2 servings.

Ingredients:

2 scoops HLTH Code Vanilla
1 scoop HLTH Code Flavor Fusions Salted Caramel
1¾ cups unsweetened yogurt (or almond yogurt)
¼ cup heavy cream
1 ½ tsp psyllium husk powder
1½ tsp ground cinnamon
¼ tsp pure vanilla extract
Pinch of sea salt
1 Tbsp sugar-free caramel syrup

Optional Toppings
Sugar-free caramel drizzle
2 Tbsp caramelized nuts
Coconut chips
Pinch of sea salt

Instructions:

In a large bowl, combine yogurt and heavy cream. Whisk vigorously for 30-40 seconds.

Add the HLTH Code Vanilla, HLTH Code Flavor Fusions Salted Caramel, oat fiber, psyllium, cinnamon, vanilla, and salt. Mix until very thick and mousse-like.

Let stand 3-4 minutes. Gently swirl in salted caramel syrup.

Transfer to a serving bowl and finish with optional toppings. Serve immediately.

NOTES:
Low-Carb Caramelized Nuts

Ingredients:

½ cup mixed nuts (almonds, pecans, or walnuts)
1 Tbsp butter (can be replaced with coconut oil)
2 Tbsp monk fruit sweetener
½ tsp cinnamon (optional)
Pinch of salt

Instructions:

Heat the coconut oil in a non-stick pan over medium-low heat. Add the nuts and toast for 3-4 minutes, stirring constantly. 

Sprinkle the sweetener, cinnamon, and salt. Stir continuously until the nuts are evenly coated and lightly caramelized (about 1-2 minutes). Make sure to keep the heat low to avoid burning the sweetener. 

Remove from the heat and spread on parchment paper to cool completely – they will crisp as they cool.
