Fried Egg with Mushroom and Arugula

Recipe makes 1 serving
Ingredients:
1 large egg
1 cup mushrooms, sliced
¼ cup onion, finely chopped
1 cup fresh arugula
1 tablespoon olive oil (or butter)
Salt and black pepper, to taste
Red pepper flakes, for garnish
Mixed herbs (like parsley or thyme), for garnish
Instructions:
In a large skillet, heat ½ tablespoon olive oil over medium heat. Add the chopped onion and sliced mushrooms to the pan. Stir-fry for 4-5 minutes, until the mushrooms are golden brown and the onions are soft.
Once the mushrooms are cooked, toss in the arugula and stir just until it wilts slightly, about 1 minute. Season with salt and black pepper to taste. Remove from heat and set aside.
In a separate pan, heat the remaining ½ tablespoon of olive oil over medium heat.
Crack the egg into the pan and cook until the white is set but the yolk remains runny, or to your preferred doneness. Season with salt, red pepper flakes, and mixed herbs.
Serve the fried egg over the prepared mushroom and arugula mixture. Sprinkle with additional red pepper flakes and herbs, if desired, and serve immediately.
