Hot Cajun Chicken Wings

The recipe makes 4 servings  

Ingredients:

CHICKEN WINGS:
2 lbs (907g)  chicken wings, tips removed
1 Tbsp Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/2 tsp cayenne pepper
Salt and black pepper to taste
1 Tbsp olive oil
1½ Tbsp mayonnaise

SAUCE:
2 tbsp (g) unsalted butter
1/4 cup (g) low carb hot sauce (such as Frank’s Red Hot Original)  

Instructions:

Preheat oven to 400°F (205°C); line a baking sheet with parchment paper or a silicone baking mat and set aside. 

Mix Cajun seasoning, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper in a small bowl. Place the chicken wings in a large mixing bowl and sprinkle the seasoning mix over them. Toss the wings until they’re well coated. Add the olive oil and mayonnaise and toss again to coat evenly. 

Arrange the wings in a single layer on the prepared baking sheet. Bake for 30-35 minutes or until the wings are crispy and fully cooked.

Melt the butter in a small saucepan over low heat and stir in the hot sauce until combined. Set aside to cool.

When the wings are done, transfer them to a large mixing bowl and pour the hot sauce mixture over them; toss until they’re well coated.

Serve hot with your favorite low-carb dipping sauce and lime or lemon wedges.
