Keto Mascarpone Crepes

The recipe makes 8 crepes (2 crepes per serving).
Ingredients:
For the Mascarpone Cream:
1¾ cups (400 g – 9 oz) mascarpone cheese, at room temperature
1 Tablespoon Monk Fruit extract powder (or more to taste)
A pinch of salt
¼ teaspoon vanilla extract
For the Crepes:
4 eggs
2 scoops HLTH Code Chocolate
1/3 cup (80 ml) unsweetened almond milk
Pinch of salt
Butter for greasing the pan
Monk Fruit extract powder for dusting (optional)
A handful of blueberries to decorate (optional)
Instructions:
In a bowl, whisk the mascarpone until smooth and creamy. Gradually add in 2 tablespoons of powdered sweetener and the salt. Taste and add more sweetener if desired until it reaches your preferred level of sweetness. Refrigerate the cream while you prepare the crepes.
In a blender, combine eggs, HLTH Code Chocolate, unsweetened almond milk and salt, and blend until you have a smooth batter. Let the batter rest for 10 minutes to allow any air bubbles to dissipate and for it to thicken slightly.
Heat a teaspoon of butter in a non-stick skillet or crepe pan over medium heat. Pour a ladleful of batter into the center of the pan and immediately swirl the pan to spread the batter into a thin, even layer. Use a spatula or crepe spreader to smooth out the surface and fill any holes. Once the crepe is lightly browned on the bottom, flip it over and cook the other side.
Transfer the cooked crepe to a plate and repeat with the remaining batter, greasing the pan often with butter, to prevent the crepes from burning. Separate each crepe with a piece of parchment paper to prevent sticking.
To assemble, place a crepe on a plate and spread a layer of the mascarpone cream over it. Fold the crepe in half, then in half again to form a triangle. Place the filled crepe on a serving platter and repeat with the remaining crepes.
Just before serving, top with blueberries and dust the crepes with powdered sweetener to taste. Enjoy!
