Key Lime Pie

Recipe makes 12 servings

Ingredients:

Crust:
1 1/2 cups walnuts, ground
2 scoops HLTH Code Chocolate Macadamia
1/4 cup unsalted butter, melted (as needed)
2 tablespoons sugar-free sweetener of choice (optional)

Filling:
2 limes, zested and juiced
1 envelope unflavored gelatin
1 cup heavy cream
2 (8-oz/226g) packages cream cheese, room temperature
1/2 cup full-fat plain Greek yogurt
2 scoops HLTH Code Creamy Vanilla
1/3 cup sugar-free sweetener of choice
1 tsp vanilla extract

 

Instructions

Crust:
Combine all crust ingredients in a bowl, then press onto the base and sides of a pie pan. Refrigerate until firm.

Filing:
Add lime juice to a bowl and sprinkle the gelatin on top; leave for 1 minute, then add 1/3 cup hot water, stirring until gelatin is dissolved.

Add gelatin, cream, lime zest, cream cheese, Greek yogurt, HLTH Code Creamy Vanilla, sweetener, and vanilla extract to a large bowl and whisk until light and fluffy. Pour the mixture into the chilled crust, smoothing the top with a spatula.

Refrigerate for an hour or until set before serving. Store covered with food wrap in the refrigerator for up to 3 days.
