Lemon Poppyseed Waffles

Recipe makes 4 mini waffles

Ingredients:
2 Scoops HLTH Code Creamy Vanilla
3 tbsp coconut flour
1/2 tsp baking powder
3 tbsp melted butter
3 tbsp water
1 tbsp lemon juice
1 tsp lemon zest
1/4 tsp liquid monkfruit extract
1 egg
1/4 tsp poppyseeds

Instructions
Melt butter in a small bowl in microwave or stovetop. Let cool
In a separate medium-sized bowl, add HLTH Code, coconut flour and baking powder
Add in water, lemon juice, lemon zest, liquid monkfruit extract, egg and melted butter into the bowl
Mix together until batter forms. Stir in poppyseeds
Butter or spray mini waffle maker with oil
Pour batter in the mini waffle maker and wait about 3 minutes before the first waffle is ready
