Maple Vanilla Protein Bars

BASE LAYER:
– 2 scoops HLTH Code Creamy Vanilla
– 6 Tablespoons coconut flour
– 2 Tablespoons unsweetened nut butter
– 1 Tablespoon coconut oil (melted)
– 1 teaspoon cocoa powder
– 1 teaspoon vanilla
– 1/4 cup sugar-free Lakanto maple syrup
– pinch of Redmond Real Salt

Mash together with a fork. Mixture will be smooth, but slightly crumbly. Press into a 8” x 6” Pyrex dish or 9” x 5” loaf pan. Cool in fridge for 15 minutes.

TOPPING:
– 1/4 cup sugar-free Lily’s or Lakanto chocolate chips
– 1 Tablespoon coconut oil

Melt in microwave in 20-second increments until smooth. Stir and pour over cooled base layer and return to fridge for 15 minutes. Cut into bars. Any that aren’t immediately eaten can be stored in the fridge.
