Roasted Garlic Cauliflower Mash

Preparation time: 10 minutes

Cooking time: 15 minutes

Serve: 10

Ingredients:
– 1 head of cauliflower
– 2 oz cream cheese
– 3 tbsp of butter
– Salt & Pepper to taste

Instructions:
1. Bring water to boil and add full head of cauliflower
2. Let boil for 15-18 mins (or until very soft)
3. Place cauliflower, cream cheese, and butter in a food processor
4. Process until creamy
5. Add garnishes (oregano or parsley) if you choose

Additional Add-Ins/Substitutions:
– Swap cream cheese & butter for unsweetened coconut cream for a dairy-free option
– Add 1-2 scoops of unflavored collagen
