Trout wrapped in bacon

Cooking time: 30 minutes

Ingredients:
1 tablespoon kosher salt
2 teaspoons black pepper
2 teaspoons garlic salt
¼ teaspoon cayenne pepper
4 12oz. trout, bones removed
1 lemon, thinly sliced
4 sprigs thyme
8 sprigs coriander
4 tablespoons chopped sage leaves
0.5 lb. bacon

Instructions:
Preheat grill to medium heat or set your oven to 400F.
In a small bowl, combine kosher salt, black pepper, garlic salt, and cayenne pepper.
Season the fish with prepared spice mixture.
Stuff the trout with lemons slices and herbs.
Wrap the fish in bacon slices and transfer on the grill, or baking sheet if using the oven.
Grill the fish 15-20 minutes, or bake for 25-30 minutes.
Serve the trout warm.
