Beef Egg Nests
Recipe makes 4 servings
Ingredients:
1 lb (450 g) ground beef (85/15 recommended)
1 Tbsp olive oil (15 ml)
1 small onion, finely diced (80 g)
2 garlic cloves, minced
1 tsp smoked paprika
½ tsp ground cumin
½ tsp dried oregano
¾ tsp salt
½ tsp black pepper
4 medium eggs
2 Tbsp grated Parmesan or crumbled feta
Fresh parsley or cilantro
Instructions:
Heat the olive oil in a large skillet over medium heat and cook the onion for 4–5 minutes until softened. Add the garlic and cook for 30 seconds.
Add the ground beef and cook for 6–8 minutes, breaking it up, until fully browned.
Stir in the paprika, cumin, oregano, salt, and pepper. Cook for 1–2 minutes to bloom the spices.
Using a spoon, make 4 small wells in the beef mixture.
Crack one egg into each well.
Cover the pan and cook on low heat for 5–7 minutes, until the egg whites are set but the yolks remain soft.
Sprinkle with cheese and fresh herbs and serve directly from the skillet.
