Bolognese Zoodles

Recipe makes 4 servings

Ingredients:

3 medium zucchinis (approximately 8.8 oz /250g each)
½ medium onion, diced
1 Tbsp olive oil
1 lb (450g) ground beef
1 Tbsp butter
1 cup crushed tomatoes
2 Tbsp tomato paste

½ cup parmesan, shredded

½ tsp granulated garlic
½ tsp dried thyme
¼ tsp salt
1/8 tsp black pepper
½ cup finely chopped parsley

Instructions:

Spiralize the zucchinis. Heat a large pan over medium heat and add the spiralized zucchinis. Cook for 5 minutes over medium heat. Remove from the heat and drain. Set the zucchinis aside.

Add the olive oil to a pan and heat up over medium heat. Add the onions and cook for 2-3 minutes.

Add the ground beef and continue to cook for 10 minutes, stirring occasionally. Drain the beef and return it back to the pan. Now, stir in the butter, crushed tomatoes, tomato paste, garlic, thyme, salt, and black pepper. Reduce the heat to medium-low and continue to cook for another 8-10 minutes, stirring occasionally.

Stir in the parsley and parmesan. Cook for 1-2 minutes and remove from the heat.

Serve the prepared Bolognese over zoodles, and enjoy!
