Chicken Meatballs with Cream Cheese Sauce

Recipe makes 4 servings

Ingredients:

1 pound (500g) ground chicken
¼ cup almond flour
¼ cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
1 Tbsp Italian seasoning
Salt and pepper to taste
Olive oil, for cooking

For the Cream Cheese Sauce:
3.5 oz (100g) cream cheese, softened
¼ cup heavy cream
½ cup chicken broth
2 cloves garlic, minced
¼ cup grated Parmesan cheese
1 Tbsp fresh herbs, optional for serving
Salt and pepper to taste

Instructions:

In a large mixing bowl, combine ground chicken, almond flour, grated Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Roll the mixture into meatballs, about 1 inch (2.54 cm)  in diameter.

Heat olive oil in a large skillet over medium heat. Add the chicken meatballs to the skillet, making sure not to overcrowd the pan. Cook in batches if necessary. 

Cook the meatballs for 8-10 minutes, turning occasionally, until they are browned on all sides and cooked through. Remove from the skillet and set aside.

In the same skillet used for cooking the meatballs, add minced garlic and cook for 1-2 minutes until fragrant.

Add chicken broth to the skillet and bring to a simmer. Reduce heat to low and add softened cream cheese to the skillet. Stir until the cream cheese is melted and well combined with the broth.

Stir in heavy cream and grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste.

Return the cooked chicken meatballs to the skillet, coating them with the cream cheese sauce. Garnish with fresh herbs before serving.
