Dijon Grilled Chicken Salad

Recipe makes 2 servings

Ingredients:

For the Chicken:
2 boneless skinless chicken breasts (12.3 ounces/350g)
1 Tbsp olive oil
1 tsp Dijon mustard
1 Tbsp lemon juice
Salt and freshly ground black pepper, to taste
Pinch of garlic powder (optional)

For the Salad:
4 cups salad greens (e.g. lamb’s lettuce, baby spinach, arugula)

For the Dressing:
1 tsp Dijon mustard
2 Tbsp olive oil
1 tsp lemon juice
1 tsp freshly squeezed grapefruit juice (optional, for aroma)
Salt and pepper, to taste

Instructions:

Mix olive oil, Dijon mustard, lemon juice, salt, pepper, and garlic powder. Rub over chicken breasts and let sit for 15-30 minutes.

Cook on a grill pan or outdoor grill for 5-6 minutes per side. Let rest for a few minutes, then slice into strips.

Place greens on a plate. Add grilled chicken slices on top. Drizzle with prepared dressing.

Garnish with a few thin grapefruit slices if desired.
