Broccoli and Salmon Salad

Recipe makes 2 servings

Ingredients:

10.5 oz/300 g salmon fillet, cooked and cut into chunks
2 cups broccoli florets, steamed
2 cups chopped lettuce or mixed greens
¼ small red onion, thinly sliced
Fresh basil leaves (optional)

Dressing
3 Tbsp olive oil
1 Tbsp Dijon mustard
1 Tbsp lemon juice
1 tsp apple cider vinegar
½ tsp garlic powder
Salt and black pepper to taste

Instructions:

Steam broccoli florets until tender but still bright green. Let cool slightly.

Cook salmon by pan-searing, baking or steaming. Cut into medium pieces.

On a large plate or in a bowl, arrange lettuce, steamed broccoli, red onion slices and salmon chunks.

Whisk together olive oil, Dijon mustard, lemon juice, apple cider vinegar, garlic powder, salt and pepper until smooth.

Drizzle the dressing over the salad. Top with fresh basil leaves if using.
