Mexican Fresco Bowl
Recipe makes 4 servings
Ingredients:
For the Beef
1 lb (450 g) ground beef
1 Tbsp olive oil (15 ml)
2 garlic cloves, minced
1 tsp chili powder
1 tsp ground cumin
½ tsp smoked paprika
½ tsp dried oregano
¾ tsp salt
½ tsp black pepper
For the Bowl
3 cups shredded romaine or iceberg lettuce
1 cup cherry tomatoes, halved (150 g)
1 avocado, sliced (200 g)
½ cup crumbled queso fresco (60 g)
¼ cup thinly sliced red onion
Optional Add-Ons
Fresh cilantro
Lime wedges
Instructions:
Heat the olive oil in a skillet over medium heat. Add the garlic and sauté for 30 seconds.
Add the ground beef and cook for 6–8 minutes, breaking it apart until fully browned.
Stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper.
Cook for 2–3 minutes more.
Divide the lettuce among bowls.
Top with the seasoned beef, tomatoes, avocado slices, red onion, and crumbled queso fresco.
Garnish with cilantro and a squeeze of fresh lime. Serve immediately.
