Cucumber Mint Fresh Bowl

The recipe makes 1 serving

Ingredients:

1 large cucumber, diced
¼ cup fresh mint, diced
½ cup coconut milk, canned
½ cup unsweetened almond milk
2 scoops HLTH Code Vanilla
A few drops of stevia or other sugar-free sweetener (if desired)
1 tsp lemon juice
1 tsp chia seeds


Instructions:

Add the cucumber, mint, coconut milk, unsweetened almond milk, HLTH Code Vanilla, and lemon juice to a blender. Blend until completely smooth. Taste and optionally add a few drops of sweetener. If the mixture is too thick, thin it out by adding a splash of almond milk.

Transfer to serving bowls and sprinkle with chia seeds. Garnish with sliced cucumber and fresh mint. Serve immediately.
