Grilled Kebab Skewers

Recipe makes 4 servings

Ingredients:

21 oz (600g) boneless lamb sirloin, cut into cubes
3.5 oz (100g) red bell pepper, chopped
3.5 oz (100g) yellow bell pepper, chopped
7 oz (200g) cherry tomatoes
5.3 oz (150g) pearl onions or small shallots, peeled
2 Tbsp olive oil
2 Tbsp lime juice
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
Salt and freshly ground black pepper, to taste
Fresh parsley, for garnish
Lemon and lime slices, for serving

Instructions:

In a bowl, mix the cubed meat with olive oil, lime juice, garlic, smoked paprika, ground cumin, salt and pepper. Let it marinate for at least 15 minutes (or up to several hours in the fridge).

Thread the marinated meat onto metal or wooden skewers (that have been soaked in water for at least 30 minutes), alternating with cherry tomatoes, bell peppers, and pearl onions.

Preheat the grill or grill pan to medium-high heat. Grill the skewers for 15-20 minutes, turning occasionally, until the meat is cooked through and slightly charred on the edges.

Arrange the skewers on a serving tray. Garnish with fresh parsley and lemon/lime slices. Serve hot.
