Jerk Chicken

Preparation time: 10 minutes + inactive time

Cooking time: 40 minutes

Serve: 4

Ingredients:
– 2.5lb. chicken drums
– 2 cloves garlic
– 1 tablespoon fresh ginger, sliced
– 1 teaspoon ground cumin
– 1 jalapeno pepper, seeded, sliced
– ¼ teaspoon ground nutmeg
– ½ teaspoon ground cinnamon
– 3 tablespoons lime juice
– 2 tablespoons melted butter
– Salt, to taste

Instructions:
1. Season the chicken drums with salt and place aside.
2. Combine garlic, ginger, cumin, jalapeno pepper, nutmeg, cinnamon, lime juice, and melted butter in a blender or food processor.
3. Blend until smooth.
4. Transfer the spice mixture to a large bowl.
5. Add chicken and coat evenly with the spices.
6. Cover and refrigerate 1 hour.
7. Preheat your grill to medium-high. If using the oven, preheat oven to 350F.
8. Grill the chicken for 40 minutes or until beautifully charred. If baking, transfer the chicken to a baking sheet and bake for 55 minutes.
9. Serve warm.
