Lemon Cookies

Recipe makes 12 cookies

Dry Ingredients:
2 scoops HLTH Code Creamy Vanilla
1 cup blanched almond flour
1/3 cup classic monkfruit sweetener
2 tbsp coconut flour
1 tsp baking powder

Wet Ingredients:
4 tbsp melted unsalted butter
2-3 tbsp lemon juice
1-2 tbsp lemon zest
2 eggs

Glaze:
2 tbsp powdered monkfruit sweetener
2 tsp heavy cream
1 tsp lemon juice

Instructions:
Preheat oven to 350 F
Pour all dry ingredients together in a mixing bowl and wisk together until fully mixed
Then zest a full medium sized lemon and add it to mixture
Next, squeeze in fresh lemon juice, and all other wet ingredients.
Mix until dough is fully formed, it will be a little runny.
Lay parchment paper on a baking tray and take a spoon from the batter to pour and evenly shape 12 cookies on the baking tray.
Bake for 8-10 minutes, bottom edges should be lightly browned when they are ready.
Make glaze by combining all ingredients in a small bowl and stir to combine.
Use a spoon to lightly pour drizzle over cookies after they are cooled.
