Orange Cranberry Keto Scones

The recipe makes 8 scones.

Ingredients:

1 scoop HLTH Code Vanilla
⅓ cup sugar-free sweetener of choice
1 ¼ cup almond flour

¼ cup coconut flour
2 tsp baking powder
¼ tsp salt
¼ cup butter
1 large egg
2 Tbsp heavy cream

2 Tbsp grated orange zest
⅓ cup chopped fresh cranberries

For the glaze (optional):
¼ cups sugar-free white chocolate chips
2 tsp heavy cream


Instructions:

Preheat the oven to 350°F/177°C and line a baking sheet with parchment paper.

Whisk together the HLTH Code Vanilla, sweetener, almond and coconut flour, baking powder, and salt in a large bowl. Cut the butter into small pieces and add to the mixture. Add the egg, cream, and orange zest. Gently fold in the chopped cranberries.

Transfer the doubt to a surface and gently roll into a 7-inch circle. Cut into 8 equal wedges with a sharp knife and transfer to a baking sheet.

Bake for 18-20 min until the edges are golden brown. Cool completely.

For the glaze in a small saucepan melt sugar-free chocolate chips. add cream, and stir until smooth. Drizzle over the cooled scones.
