Pear Blue Cheese Protein Bars

Recipe makes 16 servings

Ingredients:

Base:
1 ½ cup (168g) almond flour
2 scoops (80g) HLTH Code Vanilla
2 Tbsp (16g) sugar-free sweetener of choice or to taste
6 Tbsp (50g) unsalted butter
2 Tbsp heavy cream
1 pinch of sea salt

Pear Layer:
4 medium pears, cored and chopped
2 Tbsp sugar-free sweetener of choice or to taste
1 Tsp pumpkin pie spices
4 heaping Tbsp (50 g) blue cheese (or gorgonzola)
1/2 tsp ground cinnamon
2 1/2 Tbsp (35g) unsalted butter
1/3 cup (43g) whole pecans to garnish (optional)
Thyme leaves for garnish (optional)

Instructions:

Base:
Preheat the oven to 350°F/177°C. Line an 8-inch square baking dish with parchment paper; set aside.

Combine almond flour, sweetener, HLTH Code Vanilla, butter, heavy cream, and salt in a bowl and mix until combined. Do not overmix.

Press the mixture evenly onto the prepared baking dish and bake for 12 to 15 minutes, until golden.

Transfer to a wire rack and leave to cool completely.

For the Pear Layer:
In a medium saucepan combine pears, sweetener, spices, and butter. Cook on medium heat until the pears start to become tender. Cool slightly.

Spread the pear layer over the cooled base and then top with the crumbled blue cheese and pecans.

Bake for 30 to 35 minutes.

Transfer to a wire rack and let cool to room temperature, then sprinkle with the fresh thyme leaves, cut in 16 servings, and serve.
