Raspberry Margarita Mocktail Smoothie

Recipe makes 2 servings (350g each)

Ingredients:

1½ cup (360ml) unsweetened coconut milk (or almond milk)
¼ cup (60ml) coconut cream
½ cup (70g) frozen unsweetened raspberries
1 Tbsp (15ml) fresh lime juice
2 Tbsp (2g) monk fruit sweetener or sweetener of choice (adjust to taste)
¼ tsp lime zest (optional, for extra flavor)
½ tsp vanilla extract
1 cup (111g) ice cubes
2 scoops (78g) HLTH Code Creamy Vanilla

Lime slices, mint leaves, and fresh raspberries for garnish (optional)

 

Instructions:

In a blender, combine all ingredients and blend on high speed until smooth and creamy.

Taste the shake and adjust the sweetness or tanginess by adding more sweetener or lime juice, if desired.

Pour the Raspberry Margarita Shake into two glasses and garnish with lime slices, fresh raspberries, and a sprinkle of lime zest.
