Shrimp with Garlic, Lemon, and Chives

Cooking time: 15 minutes

Serve: 4

Ingredients:
– 4 tablespoons butter
– 1 scallion, chopped
– 2 cloves garlic, minced
– 1.5lb. shrimp, peeled and deveined
– 1 ¼ cups heavy cream
– 3 tablespoons white wine
– 1 tablespoon Italian seasoning
– 2 tablespoons chopped parsley
– 1 teaspoon lemon zest
– 2/3 cups grated parmesan
– 1lb. asparagus, trimmed, and cut into 2-inch pieces
– Salt and pepper, to taste

Instructions:
1. Melt butter in a skillet over medium-high heat.
2. Add scallion and garlic. Cook stirring for 3 minutes.
3. Add shrimp and cook until pink in color.
4. Remove the shrimp from the skillet and place aside.
5. Add heavy cream, lemon zest, Italian seasoning, and white wine. Bring to a simmer.
6. Stir in the parmesan and simmer for 3-4 minutes.
7. Place back in the shrimp and simmer add parsley. Simmer 1 minute. Season to taste.
8. In the meantime, bring a pot of salted water to a boil. Add asparagus and blanche for 3 minutes.
9. Serve shrimp with asparagus.
