Stuffed Zucchinis

Preparation time: 10 minutes

Cooking time: 30 minutes

Serve: 4

– 2 zucchinis, cut in half
– 2 tablespoons olive oil
– 1 tablespoon butter
– 0.5lb. ground beef
– 0.5lb. ground pork
– 2 teaspoons chili powder
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 ¼ cup shredded cheddar cheese
– Salt and pepper, to taste

1. Preheat oven to 400F.
2. Cut zucchinis in half, by length, and remove the seeds. Sprinkle the zucchini with salt and place aside for 10 minutes. Place the zucchinis onto a baking dish, greased with some oil.
3. Heat butter in a skillet. Add pork, beef, chili powder, basil, oregano, and chili powder.
4. Cook for 6-7 minutes over medium-high heat or until the meat is browned.
5. Stir in half the cheese and fill the zucchinis with the prepared mixture.
6. Sprinkle the meat mixture with the remaining cheese and drizzle with melted butter.
7. Bake the zucchinis for 20 minutes.
8. Serve warm.
