Avocados Stuffed With Shrimp Salad

Ingredients:
1 tablespoon olive oil
1 small clove garlic, minced
¾ cup small shrimp, peeled, deveined
½ tablespoon fresh lemon juice
3 tablespoons mayonnaise
Salt and pepper, to taste
1 medium avocado, cut in half, pitted

Instructions:
Heat olive oil in a skillet over medium-high heat.
Add garlic and cook until fragrant, for 30 seconds.
Add peeled and deveined shrimp and cook until the shrimp are opaque in color.
Remove the shrimp from the skillet and transfer to a chopping board. Chop the shrimp coarsely and transfer to a bowl. Add in lemon juice, mayonnaise and season to taste.
Cut the avocado in half. Remove the pit and scoop out avocado flesh, leaving the ¼-inch thick shell. Stuff the avocado with the shrimp salad and top with scooped avocado flesh.
Serve immediately.
