Cauliflower Bites with Garlic Yogurt

Recipe makes 4 servings

Ingredients:

1 medium head of cauliflower, cut into bite-sized florets
2 eggs
1 cup almond flour
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Cooking oil spray

For the Garlic Yogurt:
1 cup plain Greek yogurt
2 cloves garlic, minced
1 Tbsp lemon juice
Salt and pepper to taste

Instructions:

In a small bowl, combine the Greek yogurt, minced garlic, lemon juice, salt, and pepper. Mix well until smooth and creamy.

Cover and refrigerate until ready to serve.

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking oil spray.

In a shallow bowl, beat the eggs.

In another shallow bowl or plate, combine the almond flour, garlic powder, paprika, salt, and pepper.

Dip each cauliflower floret into the beaten eggs, ensuring it’s well-coated. Then, coat the cauliflower in the almond flour mixture, pressing gently to adhere.

Place the coated cauliflower florets on the prepared baking sheet in a single layer. Lightly spray the tops of the cauliflower with cooking oil spray.

Bake in the preheated oven for 20-25 minutes, turning halfway through, until the cauliflower is golden brown and crispy.

Serve the hot cauliflower bites with the chilled garlic yogurt dip on the side.
