Keto Bagels with Cream Cheese, Smoked Salmon and Capers
Recipe makes 6 servings
For the bagels:
1 ½ cup mozzarella, shredded
1oz (28g) cream cheese
1 ½ cup almond flour
1 Tbsp baking powder
1 egg, beaten
1 egg white
1 Tbsp sesame seeds
1/3 cup cream cheese
3.5 oz (100g) smoked salmon
2 Tbsp capers
Preheat the oven to 350°F/175°C. Line a baking sheet with parchment paper and set it aside.
In a large, microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 15 second increments, stirring often, until the cheese has completely melted.
Add the almond flour and baking powder. Mix with a spoon until fully incorporated.
Crack the egg into a separate bowl and whisk with a fork. Add the beaten egg to the cheese mixture and continue to mix until a smooth and sticky dough has been formed.
Knead the dough into a smooth ball. Using a knife, divide the ball into 6 equal pieces. Knead each piece into a ball and then into a log. Press the ends together to form a bagel.
Transfer the bagels to the prepared baking sheet and brush each with the egg white. Sprinkle with sesame seeds and bake for 15 minutes or until nicely browned.
Remove from the oven and cool to room temperature before slicing.
Serve each bagel with cream cheese, salmon, and capers.
