Lamb Meatballs

Preparation time: 10 minutes

Cooking time: 30 minutes

Serve: 4

Ingredients:
1lb. ground lamb
2 cloves garlic, minced
1 large egg
¼ cup almond flour
1 tablespoon coconut flour
1 teaspoon ground cumin seeds
1 teaspoon dried basil
Salt and pepper, to taste
1 tablespoon butter

Sauce:
1 tablespoon butter
2 cloves garlic
2 teaspoon red curry paste
1 teaspoon harissa paste
2 tablespoons unsweetened tomato puree
¾ cup bone broth
1 teaspoon ground chia seeds

Serving sauce:
1 cup Greek yogurt
½ small cucumber, grated
2 cloves garlic, minced
1 small bunch mint, chopped
Salt and pepper, to taste

Instructions:
Preheat your oven to 400F.
In a large bowl, combine ground lamb, garlic, egg, almond flour, coconut flour, cumin, and basil. Season the mixture to taste and shape in a walnut size balls.
Heat butter in a cast-iron skillet.
Cook the meatballs over medium-high heat for 15-20 minutes. Remove from the skillet and place aside.
Heat remaining butter in the same skillet.
Add garlic and cook until fragrant. Add curry paste, harissa paste, and tomato paste. Cook for 1 minute.
Pour in the bone broth and scrape any stick bits. Stir in the chia seeds and take off the heat. Place back the meatballs into skillet. Transfer the skillet into the oven.
Bake the meatballs for 5 minutes more.
In the meantime, make the serving (cooling sauce) by combining all the sauce ingredients in a small bowl.
Serve meatballs warm with refreshing sauce.
