Lemon Cake Protein Bars

Recipe makes 14 bars

Ingredients:
– 6 scoops HLTH Code Creamy Vanilla
– 1/2 cup chopped cashews
– 1/2 cup melted coconut oil
– 1/4 cup lemon juice
– 1/4 cup powdered monk fruit sweetener (or sugar-free sweetener of choice)
– 1/4 cup sugar-free white chocolate chips
– 2 tbsp heavy cream
– zest of a medium sized lemon


Instructions
In a medium sized mixing bowl whisk together HLTH Code, chopped cashews and powdered sweetener.
Add in lemon juice, zest of a medium sized lemon, heavy cream and chocolate chips and mix.
Finally add in melted coconut oil and mix well.
Place into an 8″x8″ pan lined with parchment paper and press firmly and evenly into the pan.
Refrigerate for at least 1 hour.
Cut into 14 bars.
Store in the refrigerator.
