Chicken Avocado Quesadillas

Recipe makes 3 servings

Ingredients:

2 large eggs
1 cup shredded mozzarella cheese
2 Tbsp almond flour
¼ tsp garlic powder
¼ tsp onion powder
Salt and pepper to taste

Filling:
1 cup cooked shredded chicken
1 ripe avocado, diced
½ cup diced red bell peppers
¼ cup diced red onion
½ cup shredded cheddar cheese
1 Tbsp olive oil
Salt and pepper to taste
Greek yogurt (optional)

 

Instructions:

In a medium bowl, whisk the eggs until well beaten.
Add the shredded mozzarella cheese, almond flour, garlic powder, onion powder, salt, and pepper. Mix until combined.
Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a small amount of butter or olive oil.
Pour half of the egg mixture into the skillet, spreading it out evenly to form a thin layer. Cook for 2-3 minutes, until the bottom is set and lightly golden.
Carefully flip the tortilla and cook for an additional 1-2 minutes, until fully cooked. Repeat with the remaining egg mixture to make a second tortilla. Set aside.

Prepare the Filling:
In the same skillet, heat 1 Tbsp of olive oil over medium heat.
Add the diced bell peppers and red onion. Sauté for 3-4 minutes, until the vegetables are tender.
Add the shredded chicken to the skillet and season with salt and pepper. Cook for another 2-3 minutes, until the chicken is heated through. Remove from heat.

Lay one of the tortillas flat on a plate or cutting board. Sprinkle half of the shredded cheddar cheese over the tortilla.
Evenly distribute the chicken and vegetable mixture over the cheese. Add the diced avocado on top of the chicken and vegetables. Sprinkle the remaining shredded cheddar cheese over the avocado.
Place the second tortilla on top.
Heat the skillet over medium heat and lightly grease it again.
Carefully place the assembled quesadilla in the skillet and cook for 2-3 minutes on each side, until the cheese is melted and the tortillas are golden brown and crispy.
Remove from the skillet and let cool for a minute before cutting into wedges.

Optionally, serve with Greek yogurt. Enjoy!
