Lemon Meringue Smoothie

The recipe makes 1 serving.

Ingredients:

1 Tablespoon lemon zest
2 Tablespoons lemon juice (30ml)
1 cup unsweetened almond or coconut milk (240ml) (almond, coconut)
2 scoops HLTH Code Vanilla
1-2 teaspoons monk fruit sweetener
1/4 cup egg white meringue (about 1 egg white or 30g of meringue)

Instructions:

In a blender, combine the lemon zest, lemon juice, plant-based milk, Vanilla HLTH Code, and monk fruit sweetener. Blend until smooth and creamy.

Pour the smoothie mixture into a glass.

Using a hand mixer or whisk, whip the egg white meringue until stiff peaks form. Gently spoon the meringue on top of the smoothie.

Use a kitchen torch to scorch the meringue until golden and slightly caramelized. Hold the torch about 2-3 inches above the meringue and move it in a circular motion to avoid burning.

Serve immediately.
