Coconut Spinach Parfait

The recipe makes 2 servings.

Ingredients:

Smoothie Base:
2 scoops HLTH Code Vanilla
1 cup unsweetened coconut milk
½ cup baby spinach
1 Tbsp chia seeds (optional, for texture)

Parfait Layers:
¼ cup Greek yogurt (unsweetened, full-fat)
¼ cup blueberries (or other mixed berries of choice)
2 Tbsp mixed nuts (chopped almonds, walnuts, or pecans)

Optional Toppings:
A sprinkle of shredded unsweetened coconut
A drizzle of sugar-free syrup

Instructions:

In a blender, combine the HLTH Code Vanilla, coconut milk, baby spinach, and chia seeds.

Blend until smooth and creamy. If the mixture is too thick, add a bit more coconut milk to reach your desired consistency.

In a glass or jar, add a spoonful of the smoothie base as the first layer.

Follow with a layer of Greek yogurt.

Add a layer of blueberries and a sprinkle of nuts.

Continue layering the smoothie base, Greek yogurt, blueberries, and nuts until the glass is full.

Top with a sprinkle of shredded coconut and a drizzle of sugar-free syrup if desired.
