Double Chocolate Mini Cake

Ingredients:

2 scoops HLTH Code Chocolate
2 Tbsp unsweetened cocoa powder
3 Tbsp almond flour
2 Tbsp coconut flour
½ tsp baking powder
2 large eggs
¼ cup unsweetened almond milk
2 Tbsp melted coconut oil (or melted butter)
2 Tbsp sugar-free chocolate chips
Pinch of salt
¼ cup whipped cream, for serving

Instructions:

Set your oven to 350°F (175°C). Lightly grease two ramekins or mini cake pans.

In a small bowl, whisk together the HLTH Code Chocolate, cocoa powder, almond flour, coconut flour, baking powder, and a pinch of salt.

In another bowl, whisk the egg, almond milk, and melted coconut oil until smooth.

Gradually fold the dry ingredients into the wet ingredients until fully incorporated. If the batter is too thick, add a bit more almond milk. Fold in the chocolate chips.

Pour the batter into the prepared ramekins or mini cake pans. Bake for 15-18 minutes, or until a toothpick inserted in the center comes out mostly clean.

Let the mini cake cool for a few minutes before enjoying. Optionally, top with whipped cream or a few extra chocolate chips!
