Russian Tea Cookies

Recipes makes 12 servings

Ingredients:

1 1/4 cups almond flour (4.4 oz / 125 g)
2 scoops HLTH Code Vanilla
1/4 cup monk fruit sweetener (1.8 oz / 50 g)
1/2 cup unsalted butter, softened (4 oz / 113 g)
1/2 cup chopped pecans (1.8 oz / 50 g)
Pinch of salt
1/4 cup powdered monk fruit sweetener, to dust (0.9 oz / 25 g)

Instructions:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the almond flour, HLTH Code Vanilla, and a pinch of salt.

In a large mixing bowl, cream together the softened butter with the monk fruit sweetener, until light and fluffy.

Gradually add the dry mixture to the butter mixture, mixing until a dough forms. Fold in the chopped pecans.

Roll the dough into 1-inch (2.5 cm) balls and place them on the prepared baking sheet, spacing them about 1 inch apart.

Bake for 12-15 minutes, or until the cookies are set and just starting to turn golden.

Dust the warm cookies generously with the powdered monk fruit sweetener to coat.

Let the cookies cool completely and serve. Store any leftovers in an airtight container.
